Lubbock Christian University’s Head Chef, Randy White, recently won the Iron Chef for Javelina Dining’s first Iron Chef Competition at Texas A&M University-Kingsville. White competed against four other chefs from various Texas universities on May 1st. The contestants were required to prepare a main entrée and a dessert using a basket of three mystery ingredients only revealed the morning of the competition: scallops, pumpkin seeds, and Israeli couscous.
White and the competitors had until noon to prepare the food to be judged by a panel of judges. Javelina Dining’s executive chef, Craig Prestero Jr., served as the kitchen judge to ensure the contestants followed the rules. Prestero is the winner of three ARAMARK culinary Excellence (ACE) gold awards.
"The Iron Chef competition was a great way for ARAMARK, food service provider and partner to our clients, to show the many talents that chefs across our company have,” said Salvador Aguirre, Director of Dining Services. “It was a great way to take the competitors out of their day to day routine and let them have some fun."
Chefs who competed against LCU’s Randy White were Reynaldo Gaytan and Eduardo Zozaya, from Texas A&M International University; Brian Sperl, from the University of Texas Health Science Center at San Antonio; and Felipe Garcia, from Texas A&M-Kingsville.
Randy has been with ARAMARK for almost seven years. In his seven years with the company, he has had the honor to lead the production team at Lubbock Christian University. Through LCU’s “An Evening With…” benefit dinners, Randy has been privileged to serve General Collin Powell, Former President George W. Bush, and Dr. Condoleezza Rice. Later in 2013, he will lead his staff in serving Tom Brokaw. Prior to ARAMARK, Randy worked for the Gaylord Texan in Grapevine and American Airline Training and Conference Center in Fort Worth. Randy studied at the Art Institute of Dallas and is a native of Lubbock.
